As with all Global GS knives, this Usuba vegetable knife is crafted from high quality Cromova18 stainless steel and ice hardened to Rockwell 56-58. The blade features an acute 15° cutting edge which holds its razor sharp edge for longer. The hollow handle is filled with sand to provide excellent balance whilst the classic Global dotted handle provides a secure grip. Smooth contours and seamless construction eliminate food or dirt traps, offering the ultimate in safety and hygiene.
