The dried Guajillo Chile has a reddish brown color. This Chilli, together with Chile Ancho, is possibly the most used in Mexico. It is used in all kinds of pork, chicken, beef or other meat stews, it is part of moles, marinades, hot sauces, etc. It is almost always used mixed with other peppers. It should always be soaked before using.
