Tradition has it that the name Vespaiola, used for the typical grape of the Breganze area, derives from its particularly sweet and sugary nature. It is an irresistible temptation for bees and wasps that delicately rest on its bunches to feed on its sweet juice. The Vespaiola grape is used to produce a precious passito wine, the Torcolato di Breganze DOC, proposed here by Maculan in a traditional version. 100% Vespaiola grapes, the bunches are hung in special rooms in the winery and left to dry slowly for about 4 months. Only then are they transformed, first with a fermentation in steel and then with a slow maturation phase in barriques, partly new, partly used, for no less than a year. Brilliant golden yellow in colour, the nose reveals an intense bouquet, with notes of honey, flowers, vanilla and noble woods. In the mouth it is sweet and gratifying. It has good body and an excellent balance between acidity and sugars. It is the wine to be reserved for special occasions, when it can be served with mature and intensely flavoured cheeses, or with simple traditional desserts.
