A truly interesting wine, made from pure Chardonnay grapes from different wine regions of Australia. This makes Penfolds' BIN 311 a white wine that well represents the complexity and versatility of Chardonnay. The grapes, in fact, come from three distinct areas: Adelaide Hills, Tumbarumba and Tasmania. Adelaide Hills, in particular, is located south of Adelaide, with a cool Mediterranean climate characterised by cold winters and hot summers. Tumbarumba, on the other hand, is located in New South Wales and has a cool continental climate. Finally, Tasmania is an island that boasts a cool maritime climate with mild temperatures and well-distributed rainfall throughout the year. The vinification of BIN 311 takes place in small stainless steel tanks, preserving the freshness and fruity aromas. The wine then rests for 8 months in French oak barrels, about a third of which are new, acquiring complexity and elegance. The nose impresses with an intense and seductive bouquet. Hints of lemon blossom and white flowers intertwine with notes of lemon and other citrus fruits. Scents of cashews, pistachio nougat and beeswax instead reveal the presence of wood. In the mouth, it is medium-bodied, with a crisp acidity that balances the softness of the fruit. The minerality typical of certain areas combines with notes of citrus fruits, apple, pear and white peach. A touch of toasted hazelnut completes the sip, giving a long and persistent finish. It perfectly complements fish dishes, shellfish, white meats and vegetables. Try it with seafood risotto, baked salmon, roast chicken and fresh cheeses.
