To end on a high note, there is nothing better than this Rosis, a precious dessert wine, Alto Adige DOC, produced from Moscato Rosa grapes. The grapes come from vineyards located not far from the city of Bolzano. We are at about 250 metres above sea level, in an area at the bottom of the valley that is protected from the colder currents that descend from the mountain peaks. Harvesting takes place between mid and late September. The grapes are harvested when they are perfectly ripe and undergo a slight drying process. At this stage, great attention must be paid to the health of the grapes. Every defect, every damaged grape, in fact, risks compromising the final result. Fermentation takes place at a controlled temperature and is followed by a phase of maturation in steel, with subsequent refinement in the bottle. Dark ruby red in colour, the bouquet is unmistakable, with delicate notes of rose and nutmeg. A pleasantly aromatic and sweet wine, it is the perfect accompaniment to traditional South Tyrolean desserts. Try it, for example, with the classic apple strudel, served with cinnamon and a scoop of cream ice cream.
