When the expert hands of the Dom Pérignon vintners harvested the grapes that would become this wine, many of the people who are now old enough to drink it were still in kindergarten. This is because Dom Pérignon P2, or rather, Plénitude 2, represents the second life of the world's most famous Champagne. A second life that begins after almost 20 years of resting in the cellar. Indeed, since the creation of each Millesimato, a certain number of bottles of Dom Pérignon are kept aside for a longer maturation period. Thanks to this additional waiting time, the activity inside the bottles intensifies and the yeasts transmit new energy to the wine. 2004 is a vintage that embodies fluidity and generosity. After a regular vegetative development and a mild August, the dry heat of the last weeks before the harvest shaped the character of this vintage. The harvest, which began on 24 September, produced healthy, ripe grapes, resulting in a wine with a precise and established minerality. In its "Second Life," the P2 2004 reveals a discreet but defined fruitiness, with notes of pink grapefruit, blood orange and fig, evolving towards a bouquet of cocoa, mocha, brioche and honey, thanks to further ageing on the lees. On the palate, the wine plays between tension and lightness, with a tactile and chiselled precision, closing on a persistent liquorice note.
