An iconic red wine that embodies the power and finesse of Australian Shiraz. We are talking about Penfolds' BIN 28, a label that has made Australian wine history. Produced from a blend of Shiraz grapes from different vocated regions of Australia: McLaren Vale, Barossa Valley, Padthaway and Clare Valley, this choice allows for a wine that best expresses the characteristics of the grape variety. The BIN (Batch Identification Number) historically indicated the numbers of the areas where the barrels were stored in the cellars. Year after year, Penfolds maintains this classification and produces a range of wines with the same characteristics linked to a terroir, grape variety or blend. Fermentation takes place in small stainless steel tanks, preserving the freshness and fruity aromas. The wine then rests for 12 months in 300 litre American oak barrels, acquiring complexity, structure and smoothness. On the nose, BIN 28 surprises with an intense and complex bouquet, characteristic of warm climates: blackcurrant, black plum, iron ore, cocoa powder, dark chocolate and cola. To these are added sweet hints of chocolate and spices such as paprika, cinnamon, pepper, cloves and fennel. In the mouth, however, it reveals a full body, with silky, velvety tannins that balance the richness of the fruit. Endowed with great ageing potential, its aromas evolve over the years, developing notes of leather, tobacco and sweet spices. A structured and complex red, it pairs perfectly with red meat dishes, game and mature cheeses. Try it with roast lamb, grilled steak and beef stews.
