There is nothing more typical than the traditional Trabocco (or trebuchet) in Abruzzo. These wooden structures, still quite common in the Adriatic Sea today, are nothing more than a fishing construction that allowed local fishermen to work even in the worst sea conditions. The Trabocchetto is nothing more than the net that is lowered from the other side of the trabocco and which is still used for fishing today. In the case of Tenuta Talamonti, however, the Trabocchetto is a Pecorino Superiore, Abruzzo DOC, pleasantly aromatic and suitable for a thousand culinary interpretations. A certified organic wine, this white wine is made exclusively from grapes harvested, by hand, in the estate vineyards. Processed with full respect for the raw material, the winemaker's aim is to make the most of the rich aromatic heritage of the grapes. We therefore proceed with vinification only in steel, with selected yeasts and strict temperature control. After vinification, the wine is simply left to rest in the bottle for a few months before being put on the market. In the glass it has a beautiful bright straw yellow colour. The nose expresses fruity notes, with fresh nuances of rennet apple, ripe pear, broom flowers and jasmine. In the mouth, it is especially surprising for the perfect balance between the richness of the fruit and the pleasant, fresh acidity.
