The Coonawarra region of South Australia boasts a cool temperate climate and soil rich in limestone and red clay. These unique soil and climate conditions create an ideal environment for growing Shiraz, resulting in grapes of exceptional quality. BIN 128 is produced from selected grapes through a meticulous vinification process. The fermentation takes place in small stainless steel tanks, preserving the freshness and fruity aromas as best as possible. The wine then rests for about 12 months in French oak barrels of different ages, acquiring complexity and structure. On the nose, BIN 128 seduces with an intense and complex bouquet. Mulberry, loganberry and wild blackberry blend with notes of coffee zabaglione and dried herbs. Cedar, mahogany and shellac reveal the presence of oak, while shoe polish, black liquorice and aniseed add to the wine's complexity. A touch of cinnamon butter completes the olfactory picture. In the mouth, it is medium-bodied, with hints of red fruits, blueberry, pomegranate and raspberry. The creaminess is balanced by lively acidity and velvety touches.
