The one offered here is a very pleasant pure Gewürztraminer that belongs to Cavit's Bottega Vinai line. Trentino DOC, this line includes wines produced from a selection of the most suitable wine-growing areas in the region. Deeply territorial wines that, as in this case, are born from the processing of typical grapes. Traminer, in particular, originates from the Trentino-Alto Adige region, and more precisely from the town of Termeno, from where it then spread, especially to some important German wine-growing areas. Traminer, in fact, benefits from cold climates, perfect for enhancing its aromas. It is, in fact, the aromatic variety par excellence. In this case, the grapes are harvested by hand, destemmed and crushed. The must remains in contact with the skins for a short time to extract all the aromas. This is followed by a very gentle pressing and the fermentation phase, again in stainless steel tanks at a controlled temperature. At the end of this phase, the wine remains in stainless steel for 4 to 5 months before bottling. We thus discover a wine characterised by a beautiful luminous, golden yellow colour with brilliant reflections. On the nose, intense notes of rose, with balsamic nuances. Complex and elegant, in the mouth it reveals clear hints of sweet fruit, such as apricot and pineapple. An extremely versatile wine, despite its aromaticity, on the table it goes well with savoury pies as well as with appetisers, first or second courses based on fish. Also perfect with delicately flavoured white meat dishes.
