Achiote paste is a spicy tomato sauce made from ground annatto seeds, which are grown in the Yucatan Peninsula in southeast Mexico. Achiote is used in traditional Yucatan and Central American dishes influenced by the Mayan culture. Great for seasoning and marinating grilled or roasted beef, chicken and the most famous Cochinita Pibil - Yucatan style barbecued pork. No colouring added to any achiote products. Just dilute 1oz of paste with ½ a cup of vinegar or 50 ml of liquid annatto. It is ready to use. You can also buy the achiote powder.
